☞ Comté AOP 2 years; strong, very fruity raw milk cheese from the Jura.
☞ Gruyère Alpage made from raw milk; a strong, nutty and fruity classic from the Swiss Alps.
☞ Tomme Aveyronnaise, sheep's cheese with a strong character from the Aveyron department.
☞ La Rousseau, goat cheese from the Haute-Savoie, creamy and very aromatic.
☞ Fromage Sévérac, the "mini-Cantal" from the region of the same name, slightly floral and delicately sour.
The total weight of the cheese is at least 600g.
By request:
☞ White wine: Maset des Montagnes, Domaine N&M de Lorgeril; pleasantly floral with notes of yellow fruits, apricot stone, slightly nutty and with an oily structure.
☞ Red wine: Cahors, Château du Port; a full-bodied and elegant Malbec with a subtle raspberry note.
